I am not a chef, by any means, but I do enjoy trying new recipes. This is a collection of my latest favorites and tried and true family recipes. All have been husband approved!

Greek Potatoes

Serves 6-8

8 large potatoes, peeled and cut into large wedges
4 garlic cloves, minced
1/2 cup olive oil
1 cup water
1 tbs oregano
1 lemon, juice of
sea salt
fresh coarse ground black pepper

1. Preheat oven to 440 degrees.
2. Put all ingredients into a baking dish large enough to hold it all.
3. Season generously with sea salt and black pepper.
4. Toss everything to distribute seasonings.
5. The garlic will drop into the water/oil solution, but its flavor will permeate the potatoes.
6. Bake for 40 minutes.
7. When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up and season lightly with a bit more sea salt and pepper and a light sprinkling of oregano.
8. Add 1/2 cup more water if pan appears to be getting dry.
9. Cook for another 40 minutes. Don't be afraid of overcooking the potatoes - they will turn out delicious!
